Leave the grill screen on fire for more than 1 min, for its surface to get hot.
Place meat pieces on the heated screen using the Yakiniku tongs.
The bottom surface of meat starts to get grilled and sizzling after 15-25 seconds.
Then, turn over the meat using the tongs and grill the other side.
How much you should leave the meat on the screen depends on your desired level of grill. (rare, medium-rare, well-done etc.)
But, please be careful not to leave it too long on the screen as the meat loses its tenderness and its surface starts to get burned by grilled too much.

Keep the meat piece folded into half with shredded leek inside and pick it up using the tongs. Place the folded meat on the heated screen.
*Size of the flame to be adjusted to minimal or medium
Leave it for 15-20 seconds on the screen so that the lower side will be lightly brown.
Flip the folded piece keeping the shredded leek inside, and grill the other side likewise.
*Inside of the meat piece will not be grilled directly on the screen, but it will be cooked with the shredded leek in the steam roast way
If you find some part of the piece not cooked enough, grilled the surface little more.
*It is cooked enough if the meat surface no longer has red parts.

Hold the intestine meat using the tongs and place it on the heated screen keeping the fatty side up.
*Size of the flame to be adjusted to medium to maximum level.
Please keep the fatty side up.
Keep it there for 90-120 seconds, and the bottom side will start being grilled.
If you start seeing the surface getting charred and the meat piece curling up, that’s a sign the meat is cooked enough.
Make sure you grill the non-fat side well.
When you think that side is grilled enough, turn the piece over and grill the fatty side.
*It is best if you do not grill the fatty side too much, only for 40-60 seconds.
The meat is ready!
The best serving timing would be when you see that the fatty side lightly roasted and the fat surface turning glossy, like the one on the left, 3.
